I personally struggled for over 25 years with debilitating chronic pain that doctors could not understand.
Being subjected to judgmental glares and enduring dozens of horrifying misdiagnoses from lupus to Lyme disease to leukemia, I was so relieved to learn I have celiac disease.
Instead of feeling restricted and deprived, I felt empowered and liberated, knowing that my illness was in my body, not “in my head” as so many doctors implied over the years.
Only a few short months after learning about gluten, its harmful effects on the body and being further diagnosed with multiple food allergies to soy, peanuts and tree nuts, I combined my skills and knowledge as a research scientist in chronic inflammatory pain and natural products research with my culinary experience to overcome the challenges of eliminating entire food groups from my diet.
Because of my professional background, I look at nutrition different from most, seeing nutrition from the inside out – and answering the question “What do the foods we eat do inside our bodies?” I believe this unique, fact-based approach to nutrition, combined with my own personal experience living with celiac disease and multiple food allergies gives me insight into the nutrition of multiple special diets few are able to offer.
